Divide toast among plates and top with caramelised onions & sardines. Garnish with some fresh fennel fronds or dill.
Ladle soup into mini casserole dishes or bowls, and cover the top with bread slices, serve immediately.

For an extra special effect use a blow torch to char the mandarin, top the custard’s with the charred mandarin & a teaspoon of whisky mandarin peel.
Place the steaks on serving plates with the fries and kale. Drizzle the sauce over the steaks and sprinkle with parsley.
