Orange, Thyme & Gin
This beautiful cocktail will make good use of all that fresh Thyme in your herb garden.
- 45ml Blind Tiger Organic Gin
- 30ml Blood Orange Juice
- 7ml Simple Syrup (or to taste)
- Club Soda
- Thyme and Orange Slices for Garnish
Make the simple syrup in this cocktail by combining 1/4 cup of water and 1/4 cup of cane sugar. Simmer both in a pot until the sugar dissolves.
Once dissolved, turn off and add 8 sprigs of Thyme to the mix and put lid on the pot. Leave the sprigs to steep in the mixture for 10 minutes. After 10 minutes, strain and mixture can be left in the fridge for up to 2 weeks. Ensure mixture is well chilled before adding to cocktail.
To make the cocktail:
Add blood orange juice to a cocktail shaker with ice, gin and simple syrup. Shake well 4-5 times. Pour into low ball glass filled with ice, top with soda water and garnish with an orange slice and sprig of thyme.
Add the freshly squeezed lemon juice, sugar and Blind Tiger to a clean highball glass and stir. Add plenty of cubed ice and stir again. Top with soda water and stir for a final time. Garnish with the lemon slice then serve.
